William Longley


William Longley has spent the past nine years investigating the rapid growth in obesity. He has worked with experts and researchers from leading academic and medical institutions around the world. In 2003 he became aware of the link between Torus Palatinus and lower weight.

The relationship between smaller oral capacity, slowed food intake and lower body weight was established with academic research at the Pennington Biomedical Center and published in Obesity Research. More studies followed proving slower food intake, thorough chewing, more tasting of food and triggering the bodies satiety response (feeling of fullness) by use of a custom made oral device resulted in excess weight loss (EWL) of 38.1% over a four month clinical trial.

Prior to Scientific Intake, Mr. Longley co-founded Medcast which merged with Web MD in 1999. He also created the Health Monitor Network of blood pressure machines throughout Canada and the U.S. He is a Senior Scholar at Thomas Jefferson Medical College and has widely lectured on dietary restriction at the mouth vs. the stomach as well as rapid vs. slow food intake as it relates to body weight.

Ara is a leading nutritional expert and spiritual counsellor who helps people live a healthy lifestyle. She is a licensed Registered Holistic Nutritionist (RHN), a Registered Nutritional Consulting Practitioner (RNCP) and Spiritual Counsellor. Session Title: The Skinny on Fat

It seems that every decade has a nutrient that becomes the “hot” topic and a new diet book hits the shelves. In the 80’s it was carbohydrates and so we ate pasta and potatoes, athletes would deplete their carbs only to load them up before a big race. In the 90’s it was fat: there were “good” fats and “bad” fats. Now, we even have “fake” fats. Today, protein is the hot topic and there is a barrage of high protein diets on the market. An unfortunate outcome of all these diet books is that people are confused more than ever and obesity is on the rise.
Food is really a chance to connect to yourself several times throughout the day. If we learn to listen to our bodies without all the excess food, noise, thoughts, information and really listen, then we will be able to know exactly what our bodies need to feel nourished. When you eat whole foods, you have fewer cravings for unhealthy food as time goes on and you are less of a slave to it. You don’t have to measure anything, except the measurement of how you feel and how peaceful your mind is.

Session Title: Syndrome X – The Modern Day Metabolic Puzzle

In large part, due to Syndrome X, our current generation is the first one in history predicted to have a shorter life expectancy than the previous generation! Hippocrates told us to “let our food be our medicine”. This statement is as profound now as it was then. There is an emerging theory that high levels of insulin (not glucose necessarily) in the maternal circulation predisposes the baby to be born with insulin resistance and hence a propensity toward the development of Syndrome X.
While this is not a genetic birth defect per se, it could be considered a “Conditioned Defect” due to the in utero environment. This may explain in part why certain minorities in the lower economic strata are particularly prone to Syndrome X. Inexpensive, carb-laden, high glycemic foods are a mainstay of the diet.

She completed her family medicine training at Dalhousie University (other degrees) She runs a solo family practice in South Etobicoke with an emphasis on complementary medicine and prevention.
